I would have also loved to see them go full ship of Theseus and have the entire ship and crew replaced by various repairs and refugees they picked up along the way. So by the time they got “home” not only would they be seeing it for the first time, but that what made it home was the Federation culture that the original crew embodied.
Anyway, that in particular story would never happen in the visual mediums.

It could work in animation, where you could replace characters without having to fire voice actors. For example, IIRC Fred Tatasciore does a bunch of other voices in addition to Shaxs.
Or you could just have Jeffrey Combs be the main cast, LOL.

You get a similar story from Star Trek Protostar. Non Starfleet crew in a federation starship learning the roles as they go.
