It’s because the instant pot is a cooking pot, and soups are best coooked in pots.

How is it complicating anything? An instant pot can be used exactly like a regular pot on a stovetop would be used.

Looks like the instant pot helps to soften up the raw cashews used to add texture to the soup.
Instant pots are multi-purpose, not just for pressure cooking. They can also be used to saute, as a slow cooker, or just as a regular pot with a built-in heating element, among other things.
You could definitely cook it with a regular pot, would just have firmer cashews in a regular pot maybe? The pressure cooking basically does what a slow cooker does more or less, but in less time so the results are still usually slightly different from a regular pot.
