Tomatoes are the natural companion to eggs. Bit o stir fried tomato, pinch of sugar, with eggs beaten with white pepper and sesame oil, chopped scallion? Oh! That’s a nice meal.
Or shakshuka. Poach the eggs in a tomato pepper sauce with chili, some ras el hanout, maybe some mint and feta, top it all with za’atar? Hello!
Salt pepper and parsley does a great job, but i like to put some Green Goddess on mine too. It’s just so good.
And, of course, use a little milk or cheese in your eggs for optimal fluffiness
