I can and do eat cheese. I just am tired of having it be a major part of everything I eat.

Tonight I made some angel hair pasta, which was delicious. Cheese was involved of course!

I love cheese so much but also love:

Beans and rice, in all their endless delicious variations.

Eggs and home fried potatoes and refried beans.

Coconut milk curry, vegetables and chicken or shrimp or tofu.

Speaking of chicken - chicken and yellow rice with black beans.

Salmon and potatoes - cut the potatoes up and toss them with olive oil and salt, let them cook then move them around and put the salmon on the pan. Whatever you are seasoning the fish with, pour some on the potatoes too (lemon or if you have a marinade) then back in the oven till the fish is cooked.

my mom came up with this absolute banger, super simple, easy to elevate if you feel like playing around

chicken (whatever floats your boat, i prefer bone-in skin-on thigh but my mom always used skinless breasts)

    one jar of orange marmalade

3/4 a bottle of italian dressing

throw it in the white crockware and bake half an hour, turn on the broiler at the end if you feel nice, then serve with some plain rice with a hefty spoon of that juice over it, and any salad or green, i like a bomb garlicky sauteed broccoli, my mom always called it “orange chicken” and it makes for great leftovers even, hope you like it -

That looks tasty! I don’t think I’ve had chickpeas 🤔

Side note, the first recipe that came up when I searched for it said it reminded the author of…Texas?? Fascinating lol

I’ve had this problem too, I’d second the asian food reccomendation

Jambalaya, curry, and soup & stews all come to mind also

We have made so much soup lol. Hoping to make gumbo soon just don’t have enough ingredients. Might make jambalaya instead since we have most of those those ingredients.

Does jambalaya usually take thyme? I don’t remember adding it before but it’s been in a number of recipes

I’ve never included it, but I’ve usually also made it from a box. Gumbo I made from scratch with a friend at one point, and I did make jambalaya from scratch once, but I don’t think I remember it turning out super well

From what I can see looking around online it seems to be a common inclusion, and Cajun cooking is generally heavily spiced, so I’d give it a shot 🤷‍♂️

This is true. And there are so many choices too… definitely going to look for some new things I haven’t had before!
