Hi friends. Does anyone have a tried-and-true yeasted gluten-free dough recipe? I know it can be done, because the pizza in Sicily made me cry with joy. It was like pizza I remembered from BC (Before Celiac), and even my spouse thought it was as good as his glutenous ones. I have tried many recipes since that trip, even translating some from Italian, but always end up with sad, hard crusts.

I’m willing to buy special ingredients, use special methods, or learn all the hacks for whatever recipe you use. I just want real pizza again! Thanks for any leads y’all have.

    I don’t have a specific recipe, but Caputo’s gluten free flour (fioreglut) is fantastic for gf recipes. We used it at an Italian restaurant I used to work at and it’s now my go to for any gf needs.

      Thank you! I’ve used that in the past, but just found a recipe on their website that I haven’t tried yet - I will give it a try.

    Have you tried the one from the pizza Bible? (Now that I think about it, I’m unsure if it has one, but I thought to name Drop the book if you have not yet checked. Try your local library, or your favorite way to get stuff

      Thanks for the idea. I just quickly borrowed it via Libby, and he did not include any gluten free recipes. He recommends a store-bought mix called cup4cup (which I don’t love), but it’s possible they’ve changed the formula since I tried it last.
